SEO stands for Search Engine Optimization. There are generally speaking two types of SEO: On page and off page. On page SEO relates to how well your site is structured in terms of hierarchy and categorization of your links.
In other words if your blog is about fishing tackle then the navigation should obviously reflect this in a logical fashion; however often this is misguided because what the person thinks is the right category is actually the wrong one.
SEO is a relatively small but strong industry. The reason it is an industry is because you can have a site that brings in millions of people to your site (if you are in the right niche). You don't necessarily need SEO to have traffic, but it can help sustain it.
